That sounds tasty Julia.
I did very much the same. I roasted my veg,onions,mushrooms,courgettes,tomatoes,and sweet potatoes. I did this with mince. I too cooked enough for tomorrow because i love cooking!! |

Mmmm, sounds even better with mince, Anne, but I've been cutting right back on meat and poultry with the intention of at least being half vegetarian. I
miss them though.

Oh yes, it is a bit like ratatouille, Kodeine, but tastes different from my usual ratatouille as the main veg I always use is aubergine, which was missing from
this dish.
I haven't decided on tonight's - maybe pizza and chips. |

I know two types of edible gourd: the "bottle gourd" and the "bitter gourd". Its hard to describe how the bitter gourd tastes - expect that it is "bitter", , and therefore good stir-fried with
other vegetables or mixed with eggs or tofu to "soften" its taste. Ive seen it used in pasta, salads, stuffed with ground meat and shrimps, as a
drink, and for chips.
(Its also good for dieting and diabetes.)

Bitter gourd is something I've never come across. It sounds interesting.
We have just had pork chops, mashed sweet potato, potatoes boiled in their skins, broccoli and snap peas, followed by home-made lemon and maple syrup rice pudding - an unusual taste. Worth trying again, but cold with stewed fruit (make mental reminder). |
